Pumpkin Seeds and Diabetes Research

Pumpkin extract proves to be potentially helpful for pre-diabetic persons, as well as those who have already developed diabetes by lowering their blood glucose levels. Besides, pumpkin extracts proved to reduce the amount of oxidative cell damage, witness pumpkin’s antioxidant effect.

 

Low magnesium levels are common in people with insulin resistance, which is one reason why diabetes occurs. And Pumpkin seeds are high in magnesium. Studies found that some of the macromolecules in pumpkin seeds may be helpful to keep blood sugar under great control.

#pancreas-preserving effects


南瓜味甘性溫,具有消炎止痛及利尿等功效,對糖尿病患者尤佳。美國聯邦食品藥物管理局(FDA)將南瓜列為30種抗癌蔬果之一。鈷是構成紅血球的重要成分之一,所以有「南瓜補血」之說法。

 

研究發現南瓜籽當中的一些大分子可能有助於控制血糖。 鎂偏低,在胰島素抵抗者中很常見,是糖尿病發生的原因之一。而南瓜子富含鎂和健康的脂肪酸。

 

 

南瓜抗癌

南瓜含的β-胡蘿蔔素、維他命C和E,可抑制癌細胞生長;黃體素能預防肺癌、子宮癌、乳癌、皮膚癌、大腸癌、食道癌等癌症,而甘露醇可降低腸病變的機率

 

南瓜籽含量高,可預防攝護腺腫大或病變成癌症。南瓜肉及波菜、A菜等一起食用,有加乘效應,能中和農藥、亞硝酸鹽及重金屬等物質,使免疫系統中的T細胞活化、B細胞產生抗體。

 

 

南瓜可促進體內胰島素的分泌而加強葡萄糖的代謝,纖維可幫助腸道多餘的糖排出體外,對糖尿病患者尤佳;β-胡蘿蔔素還具有保護心臟、血液系統的作用,並增強黏膜及皮膚的健康與抵抗力。

 

攝食過多的南瓜的副作用

維他命A儲存在肝內,造成膽汁不容易排泄,皮膚會偏黃。

南瓜派、奶油南瓜湯、南瓜飯、南瓜煎餅(將南瓜搗成泥,再與麵粉、糖(少量)及雞蛋混合)、南瓜燒牛肉

 

挑選好的南瓜

瓜皮呈金黃,有油亮的斑紋、農藥用量較少,所以用菜瓜布刷洗後可以連皮一起食用。

 

南瓜營養成分

100公克的南瓜,含水分90.8%,熱量24卡,脂肪0.2公克,蛋白質0.9公克,碳水化合物5.5公克,纖維1.4公克,維他命A 900I.U.,維他命B1 0.12公克,維他命B2 0.04公克,維他命B6 0.04公克,維他命C 18毫克,微量維他命E,礦物質含鈣13毫克,磷38毫克,鐵1.1毫克,鎂14毫克,鉀320毫克,鈉1毫克,及稀有元素鋅、硒、銅、鈷、鎳、鉻、菸鹼酸等,還有β-胡蘿蔔素等,β-胡蘿蔔素含量是瓜類之冠。
