據統計,2017年愛料理網站年度熱門食譜的Top1是「台式泡菜」不得不說,台式泡菜搭配豆腐真的好好吃!泡菜屬於一種醃漬食物,有滿滿的益生菌,可以改善腸胃健康和改善腸胃不適。

 

台式泡菜和韓式泡菜差在哪裡?
1. 外觀不同,台式泡菜使用少量辣椒,不式泡菜使用多量的辣椒粉和魚露等,鹹度比較重,辣度較高。

2. 台式泡菜多使用高麗菜,韓國泡菜以大白菜為主。傳統韓式泡菜會用整顆大白菜鹽醃、重壓,出水後再大量塗抹辣醬進行醃漬。台式泡菜通常將高麗菜撥成小片。

 

製作台式泡菜材料
高麗菜+紅蘿蔔

醃漬配料:蒜末、辣椒段或絲、醋、糖、鹽巴、水。

 

※關鍵在於製作醋汁調醬,1直接混合調醬,將蒜末、辣椒段或絲、醋、糖、鹽巴、水等拌勻就可以。

加熱煮醋汁醃料能幫助糖、鹽等化開,使用細砂糖或細鹽巴可以避免攪拌不勻的問題,紅糖就需要,但紅糖和黑糖比較健康。加熱煮醃料,要等待放涼,再醃漬裝罐。

 

今年台灣高麗菜異常便宜,而且都很好吃,真的應該親手做做看。畢竟很多加工食品為了延長保存期限或運送過程不腐壞,很多化學藥劑的名稱都讓人看了心抖抖。

 

※專家提醒製作過程完全不可用自來水或生水,容易使泡菜腐敗。製作台式泡菜時,放入幾顆醃酸梅或話梅或把百香果的汁加入醋汁,口感會更有層次。
